The Carton's 16th edition is a limited 3-volume set, tackling a snippet of the vast topic of "Extinction" in the Middle East. We travel to Lebanon’s largest two cities to peel away at the stories behind their shrouded houses that date back to the 19th century: who lives there, how do they live and why are these structures so important? We take a short walk down culinary ecology as we ponder some of the basic efforts that could be undertaken to preserve both tradition and resources across cultures.
